Each year around the Solstice, we treasure making one of the most iconic Yuletide desserts, featuring ingredients prepared by the foragers and forest product enthusiasts from the Acornucopia Project.
This Yule Log cake is intended to be a celebration of the diversity and bounty of our Appalachian woodlands. Ingredients are 100% local, and every component includes a foraged ingredient — an acorn flour chocolate genoise cake is swirled with hickory nut diplomat cream and iced with black walnut ganache using French Broad Chocolate. Garnished with crystallized evergreen hemlock, FBC cacao nibs, heirloom apple “mushrooms,” and dusted with shimmering natural mica, it is a stunning and unique representation of our most delectable forest flora.
