Each year, just before the Solstice, we treasure making one of the most iconic Yuletide desserts, focusing on ingredients prepared by our favorite foragers and forest product enthusiasts from the Acornucopia Project.
This “Log” cake is intended to be a thoughtful celebration of the diversity and bounty of our Appalachian woodlands. All ingredients are 100% local, and every component includes a foraged ingredient — a White Oak acorn flour sponge cake is swirled with Shagbark and Mockernut (Hickory) mousse and iced with a light Black Walnut cream ganache. Garnished with crystallized Hemlock and French Broad Chocolates cacao and heirloom apple “Mushrooms,” it is a stunning and unique representation of our most delectable forest flora.
