We have a welcome new guest at our holiday table this year! Dreamed up by Lola Borovyk and Renee Bussenger, with contributions from the rest of the pastry team, we present an ethereal and sumptuous pavlova!
This classic meringue-based dessert has been finessed into a delightful landscape of textures and flavors. A juniper berry scented meringue nest cradles a pepita praline whipped cream cheese layered with our beloved cranberry curd. Tart, brittle, pillowy, sweet (but not too!) and a little salty, it hits all the right places. It comes fancifully decorated with rosemary, sugared cranberries, and candied satsuma orange slices.
